Cakes, Cookies, Deserts, Pies and Archives

Chocolate Chip Cookies
3/4 c  Marg; softened 
3/4 c  Shortening 
1 1/2 c  Brown sugar, lt; packed 
3/4 c  Sugar 
3 ea Eggs 
3 T  Corn syrup
3 T  Water 
3 t  Vanilla 
3 3/4 c  Flour; unsifted 
1 1/2 t  Baking soda 
3/4 t  Salt 
3 c  Chocolate chips; semi-sweet
 
Cream marg, shortening, sugars, eggs,corn syrup, water and vanilla; beat well.  Combine flour, baking soda, salt; add to creamed mixture. Beat well.  Stir in chips.  Drop by rounded
teaspoonfulls. Bake at 350 deg. for 15 min. Allow to cool on cookie sheet for 1 min. then remove to cooling racks until completely cooled.

French Banana Cake
2/3 c  Water 
1 tb Vinegar 
1 ts Baking soda 
1 pk White cake mix 
2    Eggs 
1 1/4 c  Very ripe bananas; mashed 
2/3 c  Walnuts; chopped
 
Don't be afraid to use almost black bananas (ripeness improves the flavor) and refrigerate cake for 24 hours before serving for peak taste experience.
 
Mix water, vinegar and soda. Combine with cake mix and eggs. Stir until moistened. Scrape bowl with spatula. Add mashed bananas. Beat with electric mixer 3 minutes at medium speed (300 strokes by hand). Blend in nuts. Pour into greased and floured 9x13 inch pan. 
Bake at 350 F for 35 minutes (until toothpick comes out clean). 
VARIATION: Two 9 inch layers - baking time 25 minutes Three 8 inch layers - baking time 30 minutes.

Applesauce Cake
2 c  Unbleached Flour 
1 c  Sugar 
1 T  Corn Starch 
1 T  Cocoa 
1/2 t  Cinnamon 
1/2 t  Nutmeg 
1/2 t  Cloves 
2 t  Baking Soda 
1 t  Baking Powder 
1/2 t  Salt 
1 c  Nuts 
1 c  Raisins 
1/2 c  Oil 
1 t  Vanilla 
3 c  HOT Applesauce
 
Sift together all the dry ingredients, add nuts and raisins. Stir in the oil, vanilla and hot applesauce.  Pour into a 9 x 13-inch pan. Bake at 350 degrees F. for 30 to 40 minutes or until done.

Apple Pie
CRUST: 
1 1/2 c  flour 
1 ea stick butter, cut in pieces 
4 T  ice water 
1/4 t  salt 
1 x  Cinnamon 
  
FILLING: 
7 ea apples, sliced 
1 ea egg 
1 c  sugar 
1 1/2 c  sour cream 
2 t  vanilla 
1/3 c  flour 
1/8 t  salt 
  
TOPPING: 
1/3 c  brown sugar 
1/4 lb melted butter 
1/3 c  granulated sugar 
1  Pinch salt 
1/3 c  flour 
1 t  cinnamon 
1 c  chopped walnuts
 
Crust: Combine flour,salt and butter in bowl.Cut butter into flour. Add ice water; toss to form ball. Roll out to fit 12 inch pie pan. Sprinkle with cinnamon. Bake at 400 degrees for 20 minutes.
 
Filling: Mix filling ingredients together. Fill shell.Bake at 450 degrees for 10 minutes. Then at 350 degrees for 40 minutes.
 
Topping: Sprinkle over pie. Bake 15 minutes.
