Green Chili Smoked Brisket Burritos & Beef Jerky

Green Chile Smoked Brisket Burritos
10 oz     Green chiles, diced
1 pt        Chicken gravy
1 lrg       Bell pepper, chopped
1 lrg       Onion, chopped
1 cup     Good salsa
1 1/2 lb  Smoked beef brisket, shredded
1 tbl       Garlic, powder
               Salt to taste
16 lrg     flour tortillas
1 lb         Monterey Jack Cheese, shredded
 
In a large sauce pan or dutch oven, saute bell pepper, onion, and green chiles with garlic powder in about 3 tablespoons of oil. When onions and bell peppers are tender, add brisket, salsa, and gravy. Cook over low heat for 30 minutes, stirring occasionally. Sample often.
Spoon meat mixture and cheese onto flour tortilla and wrap. There's lots of variations possible on this but the important ingredient for the special flavor is the Chicken gravy. These burritos can be frozen and are great when re-heated.

Beef Jerky
5 lb        Beef (roast)
1/4 cup Soy sauce
1 tbl       Worstershire sauce
1 tsp     Garlic powder
1 tsp     Onion powder
1 tsp     Black pepper, preferably cracked Red pepper flakes
1 tbl       Liquid smoke
 
I make Jerky by buying about 5 lbs of beef. Usually a roast. I then remove the fat. Place the strips of meat into marinade and let soak for about 24 hours. Remove from marinade and allow to air dry for at least one hour. If you have a meat smoker then omit the liquid smoke and smoke meat at a low temperature
